The Maison Colibri story
The birth of Maison Colibri. A classic among classics, the madeleine has many fans. Maison Colibri was created to reinvent the madeleine, offering you exclusive recipes combining gourmandise and inventiveness.
THE FIRST COLIBRI COOKIE FACTORY
It bears the name Sire de Pons. Madeleines are handmade here to perpetuate the memory of the marzipans of yesteryear. They are then sold out of the station in little carts bearing the cookie factory's colors.

A new Petit Colibri cookie factory was created in 1922 by a baker, Daniel Faure. Fascinated by the little bird, he wanted to create
Creating pastries as light as a Colibri
His store soon met with great success and ensured the growth of the industrial cookie factory in Pons, which became the "Cité des Biscuits".
A few years later, Petit Colibri absorbed the other cookie factories, notably Sire de Pons.
New impetus
In 1946, the company was bought by Gabriel Moreau, an industrialist who gave it new impetus. The company then employed around twenty people, and production was now shipped to customers by parcel post.
A new plant
A new factory is built in 1965, and production automation begins.
Under the management of Gabriel Faure, the cookie factory expanded rapidly, employing over 300 people throughout France. On the strength of its success, the company was sold to various industrial groups interested in its heritage and unique know-how.
Chocolate shell patent pending
The chocolate shell, our signature. For many years, the coque has been hand-molded, an innovation acclaimed by gourmets everywhere.
Since 1973, it has combined the crunch of chocolate with the softness of the madeleine. A unique, patented recipe, it is in a way the trademark of Maison Colibri. It is now available in dark or milk chocolate.
LE COLIBRI ON THE MOVE AGAIN
In 2017, the brand rose from the ashes with a new identity: Maison Colibri.
From now on, only the historic Pons factory remains. New recipes for madeleines are born, while perpetuating the Maison's ancestral know-how.
Opening of the online store
In 2019, we opened our online store, so you can now order and have our madeleines delivered anywhere in France.
We're also developing exclusive products such as boxes of madeleines to personalize for all occasions, and the famous Advent calendar.
PSECOND POSTER CAMPAIGN
In 2022, Maison Colibri launched its first poster campaign. The chocolate-shell madeleines were displayed 4 by 3m in Paris metro stations. What a proud moment for the whole team, and what a long way the brand has come.

We continue to shake up the codes of the pastry department to bring you ever more original recipes. With nearly a dozen permanent recipes, there's something for every taste: with or without chocolate, fruity flavors, or the traditional pure butter madeleine.
And for even greater variety, we've also created limited editions available exclusively from our online boutique.
