Maison colibri patented its chocolate shell recipe in 1973. The classic recipe for plain madeleine with its dark chocolate shell still exists on the shelves and appeals to the greatest number. Building on its success, Maison Colibri wanted to expand its chocolate range with the creation of this brand new recipe.
The chocolate shells are made in the historic Maison Colibri workshop. They are made in Pons, in Charente-Maritime. All of our shells are molded by hand. This explains why the madeleine is so soft and the chocolate so crunchy. It is this combination of these two textures that makes our recipes incredibly good and completely addicting.
